What Configurations are required for Scheduling Tasks on Server;like sending emails and scheduling option to appear
To use Scheduling on Server Feature user need to be on Foundation.
If customer is only using UG that is only One Step and Review Process while submitting the scripts then there is no need to set an email settings as long as their Sharepoint team has configured the SMTP server on the Sharepoint ; please check with customer Sharepoint team whether SMTP server has been configured.
If customer is using via workflow that is Forms then they can use the SendEmail Plugin and also the Notification email can be used in those you do get an option to add attachments.
